Kohler Trip: Parting is Such Sweet Sorrow

Shortbread Cookies

2 cups butter
1 cup brown sugar
2 tsp. vanilla extract
3 3/4 cups flour
Vanilla sugar from Penzey's (optional)

Preheat oven to 325°F.
Cream butter, vanilla and sugar. Add flour and mix well. Sprinkle board with flour and knead for a few minutes, making sure to add enough flour to make a soft dough. Pinch off enough dough to make about a 1 to 1.5 inch ball. Roll balls in vanilla sugar; coating completely. Place on ungreased cookie sheet and flatten slightly with hand. If not using vanilla sugar, sprinkle with brown sugar after flattening. Prick top of cookie with fork or toothpick.

Bake for 10-20 minutes or until golden brown. I like it a little more on the brown side (like the color I wish my skin would get in the sun) rather than pale; I think it tastes better. Adjust cooking time to your oven. I use a convection fan that makes some time difference.

Try to hide them from your family if you are bringing to a party.
